2 pints Sungold tomatoes
1 cup thinly sliced sweet onion
1 cup feta cheese crumbles
1/4 cup lemon juice
1/4 cup olive oil
salt & pepper
Put the cheese, lemon juice, and olive oil in the bottom of a large bowl. Whisk or stir to thoroughly combine; I find this easiest to do with my hands.
Thinly slice the cucumbers. Cut the cherry tomatoes in half. Add the cucumbers, tomatoes, and onions to the dressing and toss. Season to taste with salt and pepper.
